You can change the name and description in the Settings tab. You will also be given the opportunity to change the style of the text. 

You can also easily copy text from a Word document. See also "Can I copy text from Word to Mercell Source-to-Contract?"

The name and description of the solicitation (RFP, ITB, RFQ) are always visible for invited providers.
